I've tried the regular electric knives with 2 blades, and never seemed to get the knack of keeping it together right - I usually end up looking like I had used a chain-saw. I'd still cut myself faster than I can say: "OH SHIII..." My granddad used to tell me that a really sharp knife is safer than a less-sharp one. He said the sharp one easily 'slices', whereas you 'hack' or 'saw' more with the dull one and that is what causes all the problems. And that's the truth, or my name ain't 'Seven-Fingers-Sam'.
